*sigh*. Macaron gods were not so kind to me yesterday. Maybe I lost my macaron mojo. Maybe I got macaron cocky. Either or, the second thing to come out of my kitchen this past weekend was an utter failure (to me at least).

I attempted to make some mango macarons feeling very inspired by the freeze-dried fruit that Bob had bestowed me earlier this month.
I had been reading other recipes where they had put about 25g of fruit powder in their macaron shells. I looked at the package and it yields 28g. I tried some, and it was actually quite good. Had to seriously stop myself from eating the whole package. In it went, the rest of the contents, into the food processor with its almond meal and powdered sugar brethren.

I used my usual recipe and that may have been part of the problem (I think, at least). Maybe there was too little egg whites to make up for almost 26g maybe even 27 g of freeze dried fruit. I’ve also realized that no matter how much or how little of freeze dried fruit you use, your macarons will not taste like, in this case, mango. There was a hint of it, but the powdered sugar really takes over. Unfortunately, I couldn’t find any mango extract to give it a bit of oomph. Maybe I used too much food colouring. To get this lovely, light, orange colour it took 4 drops of red and 36 drops of yellow food colouring.

I can only hope next time will be better. Besides cracked shells, the texture is perfect: a soft, chewy persuasion. Because of my mild macaron depression, I wasn’t in the mood to even attempt a mango mousse. Instead, I’ve filled them with a blackberry jam. Oh everyone, if you guys lived in the city, I would have called you over to take them away, out of my sight as fast as you could.
